Honey Eye’m Home Introduces Doc’s Blend Flavored Honeys

Use them to enhance foods, cocktails, and teas

Dr. Pinkerton’s apiary is all abuzz over its new line of flavored honeys.

In time for the holidays, Honey Eye’m Home introduces Doc’s Blend, small batches of naturally flavored East Texas honey. The new product line launches with five flavors—Orange Blossom, Lavender, Lavender Violet, Butter Pecan, and Chunky Butter Pecan. Gets yours at The Granary in Longview and Tyler (Orange Blossom only), or at Insight Eyecare or East Texas Hardware in Kilgore (full line).

Honey Eye’m Home also offers a bestselling line of pepper-infused hot honeys: Stinging Hot, Bit-o-heat, and Chipotle.

Try Orange Blossom honey on flaky biscuits; lavender varieties in tea; and butter pecan over vanilla ice cream. As for hot honeys, Stinging Hot adds zing to chili; Bit-o-heat drizzled on pizza spices up your slice; and Chipotle does wonders for chicken.

Honey Eye’m Home stands apart from large-scale apiaries by not blending honey from different hives. The honey is sourced mainly from three bioregions in East Texas—farmland, forestland, and Dr. Pinkerton’s own backyard. Each location imparts a distinct flavor profile to the honey produced there, depending on the season, the weather, and what’s blooming within foraging distance of the hives. Each year, family and friends help Dr. Pinkerton select a premium Reserve honey and bottle it in a distinctive jar. In addition, Dr. Pinkerton sets aside a limited quantity of honey each year to “doctor up” with natural flavor infusions, and the recipes he has perfected thus far make up the Doc’s Blend series. For infused honeys, he may combine honey from more than one hive and source additional honey as needed from other local beekeepers who meet Honey Eye’m Home quality and production standards.

Honey Eye’m Home also offers made-to-order Bee-spoke (bespoke) honeys in just about any flavor you can dream up.
